Pancake batter
Here's a perfect pancake batter recipe for light, fluffy, and delicious pancakes:
Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 3 ½ tsp baking powder
- 1 tbsp granulated sugar
- ½ tsp salt
- 1 ¼ cups (300ml) milk
- 1 large egg
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract (optional)
Instructions:
- Mix dry ingredients: In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Mix wet ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
- Combine: Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix—lumps are okay!
- Rest (optional but recommended): Let the batter sit for 5–10 minutes for fluffier pancakes.
- Cook: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour ¼ cup of batter per pancake. Cook until bubbles form on the surface, then flip and cook for another minute or two until golden brown.
- Serve: Enjoy warm with syrup, butter, or your favorite toppings!
