Brazo de Mercedes

Brazo de Mercedes is a popular Filipino dessert made of a soft meringue roll filled with a rich custard. Here’s a simple recipe:

Ingredients

For the Meringue:

10 large egg whites

1 cup granulated sugar

1 tsp cream of tartar

1 tsp vanilla extract

2 tbsp powdered sugar (for dusting)


For the Custard Filling:

10 large egg yolks

1 can (14 oz) sweetened condensed milk

1 tsp vanilla extract

2 tbsp butter

Instructions

Step 1: Prepare the Custard Filling

1. In a saucepan over low heat, combine egg yolks, sweetened condensed milk, and butter. Stir continuously to prevent lumps.


2. Cook until the mixture thickens into a spreadable custard (about 10–12 minutes). Add vanilla extract and mix well. Set aside to cool.



Step 2: Make the Meringue

1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper and lightly grease it.


2. Beat the egg whites and cream of tartar in a mixing bowl until soft peaks form.


3. Gradually add granulated sugar while continuing to beat until stiff peaks form.


4. Fold in the vanilla extract gently.



Step 3: Bake the Meringue

1. Spread the meringue evenly onto the prepared baking sheet, creating a rectangular shape.


2. Bake for 20–25 minutes, or until the meringue is set and lightly golden on top.


3. Remove from the oven and let it cool slightly.



Step 4: Assemble the Roll

1. Dust a clean sheet of parchment paper with powdered sugar. Carefully invert the meringue onto the parchment paper.


2. Gently peel off the baking parchment from the meringue.


3. Spread the prepared custard filling evenly over the meringue.


4. Roll the meringue tightly, starting from one short end. Use the parchment paper to help guide the roll.



Step 5: Serve

Transfer the roll onto a serving plate. Dust with additional powdered sugar if desired. Slice and serve!
