No Steamed lecheflan

Ingredients:

For the caramel:

1 cup sugar

1/4 cup water


For the flan:

1 packet (10g) gulaman powder (unflavored)

2 cups water

1 can (300ml) condensed milk

1 can (370ml) evaporated milk

1 cup all-purpose cream (optional, for creaminess)

1 tsp vanilla extract

4 egg yolks (optional, for flavor and richness)

Instructions:

1. Make the caramel:

1. In a saucepan over low heat, dissolve sugar in water until it caramelizes into a golden-brown syrup.


2. Quickly pour the caramel into your mold or llanera, spreading it evenly across the bottom. Set aside to cool and harden.



2. Prepare the flan mixture:

1. Dissolve the gulaman powder in 2 cups of water. Let it sit for 5 minutes to bloom.


2. Heat the mixture over low heat, stirring constantly until the gulaman is fully dissolved (do not let it boil).


3. Add condensed milk, evaporated milk, and all-purpose cream (if using). Stir well to combine.


4. If using egg yolks, temper them by adding a small amount of the hot gulaman mixture into the yolks while stirring. Then, mix the tempered yolks back into the pot.


5. Add vanilla extract for flavor and stir gently until fully mixed.



3. Assemble and set:

1. Pour the flan mixture over the hardened caramel in the prepared mold or llanera.


2. Let it cool to room temperature, then refrigerate for at least 4 hours or until firm.



4. Serve:

1. Run a knife along the edges of the mold to loosen the flan.


2. Invert the flan onto a serving plate, allowing the caramel sauce to flow over the top.
