Strawberry Shortcake Cheesecake Rolls Recipe
Ingredients
For the Roll Cake:
3 large eggs
3/4 cup granulated sugar
1 tsp vanilla extract
3/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
Powdered sugar (for rolling)
For the Cheesecake Filling:
8 oz (225g) cream cheese, softened
1/2 cup powdered sugar
1/2 tsp vanilla extract
1 cup heavy whipping cream
For the Strawberry Topping:
2 cups fresh strawberries, diced
1/4 cup granulated sugar
1 tbsp lemon juice
For the Crumb Coating:
1/2 cup freeze-dried strawberries, crushed into powder
1/2 cup vanilla wafer crumbs
2 tbsp unsalted butter, melted

Instructions
1. Prepare the Roll Cake:
Preheat oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper.
Beat eggs and sugar on high speed for 5 minutes until pale and thick. Mix in vanilla extract.
Sift together flour, baking powder, and salt. Gently fold into the egg mixture.
Spread batter evenly into the pan and bake for 10-12 minutes, or until the cake springs back when touched.
While warm, sprinkle powdered sugar over the cake, place a clean towel on top, and roll the cake (with the towel) from the short side. Let it cool completely.
2. Make the Cheesecake Filling:
Beat cream cheese, powdered sugar, and vanilla until smooth.
In another bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
3. Prepare the Strawberry Topping:
In a saucepan, combine diced strawberries, sugar, and lemon juice. Cook over medium heat until strawberries break down and the mixture thickens. Cool completely.
4. Prepare the Crumb Coating:
Mix crushed freeze-dried strawberries, vanilla wafer crumbs, and melted butter until combined.
5. Assemble the Rolls:
Unroll the cooled cake and spread an even layer of cheesecake filling, leaving a small border. Spread a thin layer of strawberry topping over the filling.
Roll the cake back up tightly (without the towel) and refrigerate for at least 1 hour.
6. Coat and Serve:
Spread a thin layer of cheesecake filling or whipped cream on the outside of the roll and press the crumb mixture onto the surface.
Slice and serve chilled.
