- 4 cups water
- 2 tbsp cooking oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 medium tomato, chopped
- 200g pork belly or any meat of your choice, cut into small pieces (optional)
- 1 cup spinach or malunggay leaves (moringa leaves)
- 1 small bitter melon (ampalaya), sliced thinly (optional)
- 1 tbsp fish sauce (patis) or to taste
- Salt and pepper to taste
- 1-2 cups chicken or vegetable broth (optional, for more flavor)
2. **Instructions:**
1. **Prepare the Mung Beans:**

- In a large pan, heat the cooking oil over medium heat. Sauté the chopped onion and minced garlic until they become translucent and aromatic.

- If using, add the pork belly or your choice of meat. Cook until the meat is browned and cooked through.
3. **Combine and Cook:**
- Add the cooked mung beans and any remaining liquid from boiling to the pan. If needed, add chicken or vegetable broth to reach your desired consistency.
- Stir in the fish sauce, salt, and pepper. Let it simmer for about 10-15 minutes, allowing the flavors to meld together.
- Add the spinach or malunggay leaves and sliced bitter melon, if using. Cook for an additional 2-3 minutes or until the greens are wilted.
