Embutido
1. **Ingredients:**
- 1 kg ground pork
- 1 cup finely chopped carrots
- 1 cup finely chopped onions
- 1 cup sweet pickle relish
- 1/2 cup raisins
- 1/2 cup grated cheese
- 3 raw eggs
- 1/2 cup bread crumbs
- 1 can (115g) Vienna sausage, sliced lengthwise
- 3 hard-boiled eggs, sliced
- 1 cup red bell pepper, chopped
- 1/2 cup green peas (optional)
- Salt and pepper to taste
- Aluminum foil for wrapping
2. **Instructions:**
1. **Mixing the Ingredients:**
- In a large bowl, combine the ground pork, carrots, onions, sweet pickle relish, raisins, grated cheese, raw eggs, bread crumbs, red bell pepper, green peas (if using), and salt and pepper. Mix thoroughly until well combined.
2. **Shaping the Embutido:**
- Lay a piece of aluminum foil and grease it lightly. Place a portion of the mixture on the foil and shape it into a long log.
- Place the sliced Vienna sausage and hard-boiled eggs in the center of the log.
3. **Wrapping the Embutido:**
- Using the aluminum foil, wrap the embutido into a cylinder shape, making sure it is tightly sealed to prevent it from falling apart.
4. **Cooking the Embutido:**
- Prepare a steamer and steam the embutido for 1 hour or until fully cooked.
- Alternatively, you can bake it in a preheated oven at 350°F (175°C) for 1 hour.
