Maja Blanca is a popular Filipino dessert made from coconut milk, cornstarch, and sugar. It's a delicious, creamy treat often topped with toasted peanuts or corn kernels. Here's a simple and creamy recipe:
Ingredients:
2 cups coconut milk (preferably fresh or canned)
1 cup whole milk
1 cup sugar
1/2 cup cornstarch
1/2 cup water
1/4 teaspoon vanilla extract (optional)
Pinch of salt
1/4 cup toasted peanuts (for topping) or corn kernels (optional)
Instructions:
1. Prepare the Cornstarch Mixture:
In a small bowl, dissolve the cornstarch in 1/2 cup of water. Set aside.
2. Cook the Coconut Milk Mixture:
In a saucepan, combine the coconut milk, whole milk, sugar, and a pinch of salt. Stir well and place the saucepan over medium heat.
Continuously stir to prevent the mixture from burning or curdling.
3. Thicken the Maja Blanca:
Once the mixture starts to heat up (do not let it boil), slowly add the cornstarch mixture to the pan while stirring constantly.
Continue stirring until the mixture thickens and becomes smooth. This should take about 5-7 minutes.
4. Add Flavor:
Once thickened, add the vanilla extract (if using) and stir to combine.
5. Set the Maja Blanca:
Pour the thickened mixture into a mold or dish (a square or round dish works well). Smooth out the top with a spatula.
Let it cool for a few minutes at room temperature, then place it in the refrigerator to set for at least 2-3 hours or until firm.
6. Serve:
Once set, top with toasted peanuts or corn kernels for added texture and flavor.
Slice into squares or serve in individual portions.
Tips:
You can add more or less sugar depending on how sweet you want the dessert to be.
If you prefer a more coconut flavor, you can add a bit more coconut milk or even sprinkle some shredded coconut on top.
For a smoother texture, you can strain the coconut milk before using it.
